Hi, I'm Paula. I host the kind of wine day I always wished existed.

After years working inside wineries and tourism across three countries, I started WineUWant to give people something rare: an unhurried, thoughtfully designed day in wine country where the only job you have is to enjoy it.

Why I started WineUWant

I've spent my career close to wine and hospitality, from major wineries and tourism operations in Portugal and Italy to Jackson-Triggs in Niagara-on-the-Lake. That vantage point taught me what makes wine service genuinely exceptional, and where most operations quietly fall short.

Again and again, I watched people spend their one special weekend rushed from stop to stop, herded through crowded tastings, unsure whether they'd chosen well. The wine was often good. The experience rarely matched the occasion.

I knew it could be different. So I built WineUWant around a simple idea: fewer wineries, more presence, and an attentive host.

For people investing in a special Niagara or Prince Edward County wine trip, WineUWant turns an overwhelming weekend into an unhurried, personally hosted experience where every choice feels right and every moment feels worth remembering.
What shapes how I host

A designer's eye for how a day should feel

Before wine, I trained and worked in architecture and design, including years as a volunteer designing programs and spaces with APAE in Brazil. That work taught me to obsess over flow, pacing, and the small details that shape how people feel in a space.

I bring the same thinking to a wine day. When to arrive, how long to linger, when to eat, when to pause. The details you shouldn't have to think about are exactly the ones I plan for.

How I work

My loyalty is to you

Every recommendation is matched to what you're after, from your taste in wine to the ambiance you want for the day, whether that's a quiet, intimate table or a lively room with a view. I only send guests to wineries that meet a real standard of service and craft. If a place can't deliver that, it stays off the list, however good the wine.

I champion local, independent Canadian VQA wineries and the winemakers behind them, the hidden gems that rarely make the bus-tour route. Supporting them is part of what makes a day here feel like this place and no other.

I also believe wine should feel welcoming. I'll translate the menu, answer any question without judgment, and make sure everyone at the table feels included, whether it's your first tasting or your fiftieth.
